So who knew, huh? Pumpkin chips.
Honestly I made these completely by accident. I had a whole load of pumpkin to eat and was just messing around with different recipes so I wouldn't be eating the same thing everyday...
Well. That backfired big time! I ended up eating these babies every single day for over a week.
The best part though is that these are packed full of nutrients, especially vitamin A, and they are wayyyyy lower in calories than potatoes! What's not to like?
Watch the video on how to make them here: (or keep reading for written instructions)
Ingredients:
300g raw pumpkin
2tsp olive oil
a pinch of salt
0.25tsp pili-pili
0.5tsp ground turmeric (curcuma)
0.5tsp garlic powder
0.25tsp cayenne pepper
1tsp dried basil
How to:
1. Start by chopping the pumpkin into chips. Don't cut them any thinner than 1/2 a cm thick or they won't be strong enough to support their own weight. 1cm thick is probably about the best thickness if you can manage it, but don't stress too much about it. The most important thing is that they are long enough to span over two bars of your oven grill.
2. Once that's done, place all the chips into a bowl or a ziplock bag, then add the olive oil, dried basil, garlic powder, ground turmeric, pili-pili, cayenne pepper and the pinch of salt to the chips. Then make sure they are well coated with all the spices. You can then line them up on your oven grill and place in the oven for 30 minutes at 190°C.
